◊ Watercress soup perfumed with fresh mint
Preparation: 15 mins – Cooking time: 30 mins – Serves 4

Roughly chop 200g of washed watercress Dice 200g of sweet potatoes or potatoes Take half a white onion A pinch of salt and white pepper A spoonful of groundnut oil 2 sprigs of fresh mint

◊ Duck breast with Mac Toum
Preparation: 30 mins – Cooking time: 20 to 30 mins – Serves 4

Take 4 200g duck breasts pre-scored in crosses Salt, Pepper and Oil 200g of thickened veal stock or 250g of duck stock thickened with kneaded butter and flour 4 slices of dried Mac Toum (also called Malabar Orange or Beal Fruit) or a small teaspoon of orange flower A large spoonful of Grand Marnier or a large spoonful of Cointreau if you don’t have Grand Marnier.
